Food for thought

There’s nothing harder about growing up and moving out then not having a home cooked meal. I know that when I eventually have to make my own food, it will be overcooked and gross because I’m too scared to give myself food poisoning. Another thing is…I don’t want to be living off of Mac and Cheese every day. Don’t get me wrong…I love my KD but there needs to be some nutritional value somewhere so I can at least try to survive a day at the office.
Well aren’t you lucky that you have Say Radio and this lovely page because I, Jordana, (and a little help from my mom) will show you how to make meals that are quick, cheap, nutritious, and dare I say, yummy!

Spaghetti with Tomato Sauce and Goat Cheese

I myself am a carb junkie! I love my pasta, my breads, and my wraps. However, sometimes a sandwich for dinner really won’t fill you up. So how about a simple pasta dish that is filling and oh so delish!
What you need:
- 1 package of spaghetti
- 1 can of tomato sauce
- 1 package of fresh goat cheese
- 1 package of cherry tomato’s
- A basil leaf
How to make:
- Add salt to pot of water and bring to a boil.
- Add box of pasta to boiling water. Add a little olive oil.
- Cook pasta for 10 minutes or till desired firmness
- Put tomato sauce in sauce pan and heat on medium
- Drain pasta and bring to plate
- Pour tomato sauce over pasta and crumble goat cheese on top
- Slice up cherry tomatoes and chop of basil and add to dish
- ENJOY!

Chicken and Rice (an old family favourite)

Now we’re definitely going to need a little protein on other nights and this is when you have to bring out the meat! Or if you’re a veg, then a little tofu action. One helpful tip (something my mother taught me) make sure to buy a rice cooker…it will save your life! On that note, here’s a simple dish that is incredibly healthy and of course ultra scrumptious!
Ingredients:
- 1 cup raw rice
- 3-4 lb. chicken, cut in 8ths
- 1 pkg dry onion soup mix
- 4 oz. can sliced mushrooms
- 2 cups water
How to make:
- Place rice in bottom of roasting pan.
- Add chicken, and spring with onion soup mix.
- Add mushrooms with liquid and water.
- Bake covered at 325 degrees for 1 hour, or until tender.

The Ultra Salad

Another super easy dinner idea is making a huge salad! It’s healthy, filling and will keep you moving…in more ways than one! *shifts eyes* You can add any kind of veggies you want...but these are my favourites! (That's why there are no cucumbers..blech!)
Ingredients:
- 1 bag of romaine lettuce
- 1 package of cherry/grape tomatoes
- 2 ripe avocados
- 1 package of cooked chicken strips
- 1 can of kidney beans
- 1 can of chickpeas
- 4 carrots
Make it:
- Chop up, wash, and put everything into one large bowl and mix thoroughly.
- Add a little homemade salad dressing. (Super easy: 3 parts olive oil, 1 part acid: lemon juice, lime juice, vinegar etc, put into a jar, shake it up, add a little salt and pepper to taste)
- AND BOB’S YOUR UNCLE! You have a delicious, nutritious salad!

Now to throw in a little of my Hungarian heritage!

And for dessert...
Nothing beats a delicious fresh fruit salad! Remember to only buy fruits that are local. Fruit that comes from far off countries like Chile are full of pesticides. Chop up your favourite fruits and add a little lemon juice to prevent it from browning (especially apples). Another helpful tip: Consume your fruit within 20 minutes because the more oxygen that it’s exposed to, the fewer nutrients it will have.
